Mok Ant Eggs Open Flame

by Ginger

When I was little, my mom would cook us some simple dishes, which most of the ingredients could be found from nature. One of them that was popular amongst the locals, in Thailand was Mok Ant Eggs (photo by Darly), which is something very easy to do, and it’s one of the favorites amongst us kid, but finding the ingredients now might be difficult.

You’d take the ant eggs, mix well with salt, and chopped shallot, place at center of banana leaf, form the banana leaf into a pocket like and pin both side to seal, throw it in the open flame and within a couple of minutes then it’s done.

It’s great with hot steamed rice, and it’s very tasty. Since it’d be difficult to find ant eggs in the US, I wonder if I can substitute the ant eggs with something else, any suggestion?
