BBQ Chicken Wings

I was having a craving for some BBQ chicken wings so I decided to test a recipe. I used oyster sauce, salt, black pepper, ginger, lemon grass, and turmeric and sugar for seasoning. The ginger and lemon grass were crushed in a mortar using pestle. Normally you would also add a couple of cloves of garlic to give it more aroma and flavor. For about 12 pieces of chicken wings I used about two tablespoons of oyster sauce. The sugar and the oyster sauce made the chicken wings burnt easily. In Laos most people would just use lemon grass, Laos galanga, garlic, salt, black pepper, and perhaps turmeric for seasoning.

The chicken wings would have tasted better if they were cook outside using charcoal grill. I made green papaya and noodles salad to add on for the meal. The BBQ chicken wings were enough to last me three meals.

    YUMMO! i just make this yesterday…but i used a whole chicken, jointed…I used garlic and lemon grass this time, no ginger, light soy and nam pa, instead of salt and oyster sauce, with sugar and course ground black pepper, and  no tumeric… i grilled mine over hot wood coals…DELISH!   i made sticky rice and tom ma thang( you know cucumber). i didn’t have any papaya…

    I think ping kai goes with just about anything. Sometimes when we don’t make tum we can make delicious jeow to go with it.

    I like the way you make it too. I also make it that way as well but with no garlic since I am allergic to it. I can tolerate a little bit of garlic but can’t eat it everyday.
